Sheng (raw puerh) develops gradually with age and storage. Young sheng can be bright, fragrant and assertively bitter, while aged examples can develop deeper, medicinal flavors and a softer texture. Age alone doesn’t tell the whole story: the leaf material, processing and storage conditions all influence how a tea tastes.
