Shou

Shou (ripe puerh) undergoes wet-pile fermentation, a process that transforms the tea over weeks rather than years. It typically brews dark, with earthy flavors and a mellow character, but shou isn’t all alike: some teas are woody and clean, others creamy, sweet or rich. Leaf material, fermentation, storage and aging help shape those differences.
